Coffee Drink Types at Lake Safari Lodge

This is a book containing types of coffee drinks that we make at Lake Safari Lodge and how to make them. These coffees are our variation on these coffee drinks.

Here is a list of all the drinks with ratios and how many mls of milk per drink type.


Ristretto - 1:1.5 ratio with 20g of coffee = 30mls extracted coffee.


Espresso - 1: 2 ratio with 20g of coffee = 40mls extracted coffee.


Americano - Take client hot water so he can pour his own.


Cortardo - Add 40 mls, 80 mls or 100mls of milk (ask client what version).


Flat White -    1:3 ratio = 120 mls of milk.
Cappuccino - 1:3.5 ratio = 140 mls of milk.
Latte -             1:4 ratio = 160 mls of milk.


Iced Coffee (Flavoured) - 1:3.5 ratio = 140 mls of milk.


Preface

This is a book containing types of coffee drinks that we make at Lake Safari Lodge and how to make them. These coffees are our variation on these coffee drinks. You can use this guide as a starting point and play around with ratios to make the perfect coffee for your taste.

There are numerous ways to make coffee, and the method you choose depends on your personal taste preferences. Here are some popular methods for creating coffee drinks:

  1. Drip Brewing: Drip brewing is a common method that involves pouring hot water over ground coffee beans in a filter. The water gradually passes through the filter, extracting the flavors from the beans, and drips into a pot or carafe.

  2. French Press: In a French press, coarsely ground coffee is steeped in hot water for a few minutes. Afterward, a plunger with a mesh filter is pressed down to separate the grounds from the liquid, resulting in a full-bodied coffee.

  3. Espresso: Espresso is a concentrated form of coffee brewed by forcing pressurized hot water through finely ground coffee. This method produces a strong and intense coffee, typically served in small shots.

  4. Pour Over: Pour-over coffee involves pouring hot water over a filter containing medium-fine coffee grounds. This method allows for precise control over the brewing process and results in a clean, nuanced cup of coffee.

  5. Cold Brew: Cold brew coffee is made by steeping coarsely ground coffee in cold water for an extended period, usually 12 to 24 hours. The slow extraction process creates a smooth, low-acid coffee concentrate that is often diluted with water or served over ice.

  6. AeroPress: The AeroPress combines elements of both immersion and pressure brewing. It uses a plunger to force hot water through a filter containing coffee grounds, resulting in a concentrated, espresso-like coffee.

  7. Moka Pot: A Moka pot is a stovetop coffee maker that uses steam pressure to brew coffee. Water in the lower chamber heats up and creates steam, which then pushes hot water through a filter containing ground coffee and into the upper chamber.

These are just a few examples, and there are many other brewing methods and variations available. Each method offers a unique flavor profile and allows you to customize your coffee based on your taste preferences.

In this book we concentrate on making espresso based drinks that uses an espresso machine.

Coffee Drink Glassware & Crockery

There are many different types of glassware and crockery for coffee. We base the type off size of drink and what they look like. With glassware you can see the coffee through the glass but both can be visually pleasing.

I have listed the estimated sizes of each to show how a drink will fit in them with the ratios of coffee and milk so that the cup is full when served.

Ristretto

An ristretto is a strong black coffee with no dairy products involved. It can be made with a ratio of water to coffee in quantities of 1:1 and 1:1.5

For our coffee at Lake Safari Lodge, we use a 1:1.5 ratio, so 20g of coffee = 30mls of ristretto.

To make a ristretto on espresso machine:

Measure 20g of beans
Grind beans
Put ground beans in portafilter
Put portafilter into coffee machine
pull a 30 ml shot within 30 seconds

Temp: 93°C
Pressure: 9 bar

Espresso

An espresso is a strong black coffee with no dairy products involved. It can be made with a ratio of water to coffee in quantities of 1:2 to 1:2.5

To make espresso on espresso machine:

Measure 20g of beans
Grind beans
Put ground beans in portafilter
Put portafilter into coffee machine
pull a 40 ml shot within 30 seconds

Americano TD


Mochaccino TD

Cortardo

A cortado is a beverage consisting of espresso mixed with a roughly equal amount of microfoam to reduce the acidity. The milk in a cortado is steamed, we are looking for micro foam but not frothy.

Microfoam is steamed milk with small, fine bubbles and a glossy or velvety consistency.

A cortado is defined differently in a lot of places, most use a 1:2 ratio but for our coffee at Lake Safari Lodge, we use 3 different ratios depending on the clients taste. Ristretto (30mls) or espresso (40mls) to 40 mls, 80 mls or 100mls of milk depending on the clients taste.

We will ask the client who asks for a cortado if they would like  the 40, 80 or 100 ml version.

Flat White

A flat white is a coffee drink consisting of espresso mixed with microfoam.

Microfoam is steamed milk with small, fine bubbles and a glossy or velvety consistency.

For our coffee at Lake Safari Lodge, we use a 1:3 ratio, so ristretto (30mls) or espresso (40mls) to 120 mls of milk.

Cappuccino

A cappuccino is a coffee drink consisting of espresso mixed with microfoam and foam. Traditionally a cappuccino has 1 part espresso, 1 part microfoam and 1 part foam. 

Microfoam is steamed milk with small, fine bubbles and a glossy or velvety consistency. We add a a little more air when steaming the milk to get a more foamy head for the cappuccino.

For our coffee at Lake Safari Lodge, we use a 1:3.5 ratio, so ristretto (30mls) or espresso (40mls) to 140mls of milk.

Cafe Latte

A latte or café latte is a coffee drink consisting of espresso mixed with microfoam.

Microfoam is steamed milk with small, fine bubbles and a glossy or velvety consistency.

For our coffee at Lake Safari Lodge, we use a 1:4 ratio, so ristretto (30mls) or espresso (40mls) to 160mls of milk.

Irish Coffee TD

Vanilla/Caramel Cappuccino

A cappuccino is a coffee drink consisting of espresso mixed with microfoam and foam. Traditionally a cappuccino has 1 part espresso, 1 part microfoam and 1 part foam.

When adding flavor, we mix the flavor into the espresso before adding milk.

Microfoam is steamed milk with small, fine bubbles and a glossy or velvety consistency. We add a a little more air when steaming the milk to get a more foamy head for the cappuccino.

For our coffee at Lake Safari Lodge, we use a 1:3.5 ratio, so ristretto (30mls) or espresso (40mls) to 140mls of milk.
